The visible bin concept works for jelly beans because they brightly colored and have a longer shelf life. Coffee beans as we know have a short shelf life even when vacuum sealed. The color range is brown to black. While we know the oil in the bean is the gold, the oil in the bin... is gross!
Save the bins for the candy shop and store your bulk beans in air tight containers and don't buy too much at one time. For the retail side vacuum sealed one pound bags allows the customer to try different roasts from different artisan roasters. Just be careful not over order. Customers who know coffee well enough to enjoy variety are educated enough to look for roast dates.
