Brewed Coffee

I have been open for 8 weeks now, and am extrememly frutsrated with brewed coffee. I don't have enough traffic to support brrewing a pot every ninty minutes and then dumpling it out. I am open from 5:30 am to 7pm.
We push the Americanos, but have requests for brewed and flavored also. I wondered if any one else had this problem when they first opened. Our traffic is getting a little better each week, but I still don't sell enough to warrent a couple of pounds of beans each day. When I brew it, they don't come, and when I don't I'll have a couple of request in a row.

Any suggestions would be greatly appreciated!!

We had the same problem when we first opened. We wasted a lot of coffee. We also use air pots and open at 6am and usually sell quite a lot of brewed until about 9am, we sell very little in the afternoon. After 9am I only brew as requested. We use a Bunn coffee maker so it only takes 4 minutes to brew a full pot of coffee, we also do half pots. (Use half the amount of coffee and half the amount of water.) So when I get an order for brewed I give them the choice of waiting for a few minutes or an Americano. Most (99%) of our customers will wait that few minutes for a freshly brewed cup. After awhile you will see a pattern of brewed coffee drinkers. They will come in at the approx. the same time each day, then you can plan around it. We serve our brew after 2 hours of sitting. Hope that helps.

I use air pots. At lunch time when it slows down I put a pot of coffee in an air pot. It does 2 things, It keeps coffee hot and it won't continue to strengthen.

Thanks for that. I brew into air pots, but was told that the coffee will still only hold for no more than 2 hours. How long do you hold yours? I don't even like regular coffee anymore, so I am not a good judge of taste when it comes to brewed
